Vegan Marzipan Chocolates

I made these for my mum's birthday as I couldn't find any vegan marzipan chocolates anywhere! My mum loves marzipan but it's full of sugar so I wanted to create a recipe with less sugar too.


Ingredients

  • 300g dark chocolate

  • 300g ground almonds

  • 150ml maple syrup (or other syrup of your choice)

  • 1tsp almond extract

  • 1tsp rose extract (optional)

Method

  1. Melt the dark chocolate in the microwave, 30 seconds at a time until fully melted and put to one side

  2. Make the marzipan by mixing the maple syrup and extracts together, then mix in the ground almonds. I used a blender for quickness.

  3. Form the marzipan into balls using a teaspoon

  4. Using two forks, lower each marzipan ball into the chocolate and coat fully, remove and leave to set on a piece of baking parchment. You could top with chopped almonds or other toppings if you want.

  5. Once set, enjoy!
