
I made these for my mum's birthday as I couldn't find any vegan marzipan chocolates anywhere! My mum loves marzipan but it's full of sugar so I wanted to create a recipe with less sugar too.
Ingredients
300g dark chocolate
300g ground almonds
150ml maple syrup (or other syrup of your choice)
1tsp almond extract
1tsp rose extract (optional)
Method
Melt the dark chocolate in the microwave, 30 seconds at a time until fully melted and put to one side
Make the marzipan by mixing the maple syrup and extracts together, then mix in the ground almonds. I used a blender for quickness.
Form the marzipan into balls using a teaspoon
Using two forks, lower each marzipan ball into the chocolate and coat fully, remove and leave to set on a piece of baking parchment. You could top with chopped almonds or other toppings if you want.
Once set, enjoy!
